What's on your plate, Doc? Is that fried okra? Never tried it, but think I would like it - love fried pickles! I like putting pickled okra and garlic stuffed olives in ice cold tomato juice. Kinda like a virgin Bloody Mary. Morgan, I forgot to tell you that fried okra is easy to cook these days. Grocery stores all carry the breaded okra in freezer section. Cook in hot oil, okra shoud be nearly submerged. Let brown and constantly toss so it won't burn or cook unevenly. Ten minutes. I prefer fresh okra but this is really close. Do you like cucumbers, onions and tomatoes in vinegar marinade? I've been wanting that with some salmon patties...I make those alot. Also, will you eat fish, shrimp, or scallops?

Got a new chicken frying pan, and am anxious to try it out, so tonight is fried chicken!
It' really a nice one from Hamilton Beach. Jas a ceramic interior, and I like the ceramic stuff.

I don't care for cucumbers. It's a poplular German tradition around here to eat garden cucumbers with a little cream (and I think they use vinegar too). That's a popular way to dress garden lettuce as well. I use apple cider vinegar in my coleslaw.
No, I don't eat seafood either.
Your dinner sounds like a lot of work! Isn't it fairly time consuming to make homemade fried chicken?

Once it's thawed (boneless or regular hen pieces), I just rinse them and toss in cornmeal (I add onion powder, garlic powder, paprika and salt) then fry in skillet of grease. Some people soak them in buttermilk overnight and sometimes I'll use milk and eggs to create thicker coating. It takes about 15-20 minutes depending on heat. One time I soaked my chicken breasts in pickle juice and powdered sugar before tossing them in flour and it had a nice flavor. Chick-fil-A uses this step in their process. I need to try coleslaw with apple cider vinegar instead of white vinegar.

I'm boiling a half dozen eggs for tuna salad. This is what I'm putting in it: mayo, sweet pickle relish, mustard, finely chopped onion (about a quarter), boiled eggs, and one can of Starkist tuna. Salt and pepper to taste.
I will eat it with Ritz crackers for lunch and tonight I'll probably eat a sandwich on toasted wheat bread.
Tomorrow I'm making cube steaks in gravy over rice, Italian green beans and red potatoes, and homemade buttermilk biscuits.

Think I'm going to make tofu scramble tonight. I have some organic spinach and someone gave me a few garden bell peppers that I will add too. I like to put salsa in it as well.

Tonight it will be lasagna made in the slow cooker - I found a Weight Watchers recipe that looked quite simple to make.
Josh is going to meet a friend downtown then go to a movie so I will have the whole house to myself (not that I mind having him around).
We just had quite a few creatures in our back yard - there was a rabbit, a red squirrel, two blue jays and a whole flock of chickadees
They were feasting on bread scraps as well as a pizza that we had left out overnight on the dining room table (it was covered but still...)
They seemed to enjoy it very much!
Josh ripped the pizza up and scattered it across the grass.

My mom feeds the squirrels, robins, mourning doves and rabbits. She buys black sunflower seeds for the squirrels, raisins for the birds and puts out lettuce and carrot scraps for the bunnies.

We had pork chops on the stove grill, stuffing, au gratin potatoes, and fried zucchini.
A friend of Karen's gave us the biggest zucchini I have ever seen! It was bigger than an eggplant!
She only cooked half of it, and will do the other half on the outside grill on Sunday.

A box of chicken from the Publix bakery/deli. I stopped at a place that sells Filipino food - they had this pie called "egg pie" but to me it was like a very dense, sweet custard. I ate one piece then had to figure out how many points to count it as on Weight Watchers.
They make these custard tarts that they call "egg tarts" - that is what the egg pie was like.
Think I will now make a nice Caesar salad and perhaps saute some veggies - veggies are zero points. I also need to go out and buy carrots, celery, cabbage and coleslaw mix.
It seems the main focus is to fill yourself up with lots of veggies and fruits so you won't be craving the more high calorie foods all the time; having said that - that chicken you're having sound good, doccreed !

How is it different in taste than normal baked bread? Is it worth trying? It's made in the same way and with most of the same ingredients as banana bread. I like to put walnuts and extra vanilla extract in both. Yum! There are always people giving zucchini away around here. In the past I've even grated and measured it and put it in separate baggies to freeze, so I can make bread year-round.
