Okay, okay - I watched half of it. You've gotta be gutsy to try frozen food from the dollar store! So hats off to you and that guy in the video. Not only am I a big baby, but an extreme chickensh*t as well! LOL

I watched the video - it makes me want to go over to Dollarama to check out their "foodstuffs" - I have always wondered about some of the stuff I see in that aisle. I do not think we can get lobster rolls up here in Canada - they must be frozen I guess?
Yes. Everything at dollar store is either frozen, freeze dried, or it's not food!

LOL I thought being brave meant buying some of those things from the WalMart food department but yeah - Dollarama has some pretty strange things - one time I saw what looked like corn on the cob sealed in an airtight package. Did not even pick it up to see if it had an expiry date

Leftovers tonight. But, I made it through the weekend without grocery shopping. Yay!
Went to Wendy's today to get my mom a salad because she's even worse than I am about going to the grocery store. What a clustermug. Only a few cars in front of me, but it took 20 minutes anyway. Then they didn't put the dressing in the bag, so I had to park and go inside to get it. Grrr...Oh well, I fared much better than the two ladies in NC (I think it was) that got their car shot up by an angry Wendy's employee! Yikes, can you imagine? I know good help is hard to find, but seriously?? It's a scary world out there.

Too many errands today. Every place busy as h*ll for the 4th. Didn't get to the grocery store, so ordered from Pizza Hut tonight. Will have to scrounge around the cupboards and freezer to make food for tomorrow for me and my mom. I refuse to shop on holidays. I think it's disrespectful to the employees who are forced to work and don't get holiday pay.

No barbecuing in my world either (I don't even know how to use a grill! LOL). I have the ingredients to make a cold noodle salad and maybe a quinoa dish. Or a Tofurky sandwich.

I usually make mine with rotini or bowtie pasta, shredded carrots and peas. The dressing is vegan mayo with a little drizzling olive oil, garlic powder, salt and pepper. You've never even had boxed mac & cheese before? It's way better from scratch, of course. I've tried to make it a couple times, but never get the sauce the right consistency.

Mac and cheese- no BBQ here- weather crazy hot or else it is T storms. Me too! I cooked some macaroni then made a simple sauce using evaporated milk (Carnation) thickened with some flour. Then grated cheddar cheese in until it's smooth (also added a bit of smoked cheese). I like to flavour it with dry mustard, a bit of paprika and a dash of hot sauce.
I probably shouldn't add that due to getting heartburn but it gives it a nice tang. Lots of freshly ground pepper is good too.
Some people like to put it in the oven after topping it with something, then baking it, but it was pretty good just the way it was - more creamy that way.
I may add some leftover chopped up cooked chicken thighs to it for a second meal this evening (I made this yesterday actually). It's good reheated.

Thanks for the tip about the carnation milk. That might help with my sauce consistency problems. I like the crispy Panko breadcrumbs on top. When I bake it, it always turns out too dry. It's not as easy to make from scratch as it sounds!

Hope you have decent places to order pizza. I recently had Pizza Hut and they had this garlic & herb crust that was cloyingly sweet and very disgusting. I'll have to stick with Papa Murphy's Take & Bake or Tombstone from the grocery store!

Thinking about making some coleslaw later on. Probably a sandwich and slaw for dinner. Too freaking hot to turn on the oven!
