Dinner tonight was:
A fried egg, about 5 and a half slices of bacon, a piece of hot buttered whole wheat toast, and two big scoops of "DC Dark Knight Brownie Bite" goood Chonklet ice cream on top of a sugar cone!
......yeaaahhh....I'm proud of me too, as is Pogo Possum.🤪
Had a good day today guys. Hope all y'all did toooo....🙃

Last night I tried a new meatloaf recipe called "All You Need is Loaf" from the Looneyspoons Cookbook
All You Need is Loaf Janet and Greta Podleski - The Looneyspoons Collection
Easy weekday meat loaf with barbecue sauce Loaf, loaf, loaf. Tired of the same ol’ song and dance for dinner Eight Days a Week? Don’t worry, We Can Work it Out. Here’s some Help!: A recipe you just can’t Beatle— especially after A Hard Day’s Night. Sure to Please Please everyone.
1½ lbs (680 g) extra-lean ground beef or ground sirloin ½ cup dry unseasoned bread crumbs ½ cup your favorite barbecue sauce, divided ¼ cup minced fresh parsley ¹⁄³ cup minced onions 2 tbsp freshly grated Parmesan cheese 1 egg 1 tsp minced garlic ½ tsp dried basil, thyme or oregano ½ tsp each salt and freshly ground black pepper
• Preheat oven to 350ºF. Spray a broiler pan with cooking spray and set aside. • Combine beef, bread crumbs, ¼ cup barbecue sauce, parsley, onion, Parmesan cheese, egg, garlic, basil, salt and pepper in a large bowl. Mix well using your hands. Shape mixture into an oblong loaf, about 8 x 5 inches in size, and place directly on rack of broiler pan. Spread remaining barbecue sauce all over meat loaf. • Bake for 50 minutes to 1 hour, or until meat loaf is nicely browned and meat is cooked through. Let stand 5 minutes before slicing.
Turns out Andy thought my own recipe was actually better than this one because he said it seemed dry. It's probably because it's put on a rack on top of the broiler pan. You lose a lot of juice this way.
Oh well - now I know better - I'll just stick with my tried and true recipe.

I don't think I've ever used barbecue sauce on meatloaf. Might try it. Lean meat makes for the best meatloaf. I mix in just a little regular hamburger and the fat helps keep it moist.

Yeah - it was a little weird - the good part is that I can take slices of the leftover meatloaf and fry it up in a pan. That seems to help the flavour a bit.
Yesterday because I wasn't feeling 100% I used the leftover meatloaf and after cooking it as above (frying) I broke it up in small pieces with a wooden spoon. Then I added some leftover rice and a lot of spices i.e. Vindaloo spice, cayenne pepper, red pepper flakes and freshly ground pepper plus some cumin, coriander and turmeric. Whew! Was that hot! I ate some and actually felt a bit better afterwards.
Hot spicy food usually makes my nose run and clears my sinuses but yesterday that didn't happen. Still - I did feel a bit better after eating that spicy concoction.

Just had vegetable beef soup for supper that Andy made; plus we got quite a few loafs of bread yesterday at 50% off including some bagels to put in the freezer.
No idea what to make tonight (guess I will have to come up with something)

Tonight was a grilled fake turkey sandwich. Pretty boring. Was going to make a taco salad, but got back too late from my mom's to do all the chopping. Maybe tomorrow.

The chili went over well and even Andy ate it but I used a scone 'mix' that I had never tried before which didn't turn out as good as my own 'from scratch' scones; so I'll just use my own recipe next time.

Right now Andy is chopping up many types of vegetables to put in the stew - it smells really good
Yesterday we had some buns with our meal (they started out as pizza dough believe it or not) but I changed my mind so they got rolled into dinner rolls.

Yesterday we had some buns with our meal (they started out as pizza dough believe it or not) but I changed my mind so they got rolled into dinner rolls.
I found an easy, flaky pie crust recipe I'm going to try soon. Do you make your own dough?
Tonight I heated the leftover crockpot chili. I made snickerdoodle cookies, too.
