Sandwiches. Tomorrow I am baking a ham and making sweet potatoes, green beans, and yeast rolls. I'll probably make sweet cornbread too because I like the combination with ham. Ham sounds really good. Tonight we are having roast beef, potatoes, carrots cooked around the roast and probably some sweet corn (niblets corn)
Maybe I will make some cheese biscuits to go with it.

I'd like to make another roast but they can be expensive. Roast beef and ham are nice dinners to make at Christmas time, I think. Yeah, the ham is juicy this time. I've learned to bake it for a half hour less than recommended on label so it doesn't dry out. Do you guys make roast beef sandwiches with leftovers? I know it sounds gross, but I like the fatty portions for sandwiches.

That's a good idea - Josh can have a nice roast beef sandwich to take for lunch on Monday, rather than just the same old bologna f070

neesy the calzones were delicious. I haven't made those in many years - the last time I tried them you were supposed to use that ready to roll out dough (it wasn't a bad recipe) but I think if I made them now I would use my own home made dough.
Glad you enjoyed them!
What's for Christmas dinner? Are you going traditional or trying something different?

We did calzones Christmas Eve. DS and his SO were here and both loved them. (I always said I would be completely accepting of whoever he dated....but he’s dating a vegetarian. Today....Christmas. Turkey almost done. Start the potatoes boiling, stuffing in a pan in the oven (we don’t stuff bird) getting ready to work on gravy. oven goes POP!! burners go off. <sigh> turkey is in a roaster on counter, so that’s fine. cut potatoes smaller and put them in Instant Pot. stuffing has been moved to air fryer. going to have to settle for canned gravy.

We put in a work order on December 26. Since the 26th is a stat holiday I was not upset that the superintendent did not show up. He did come shortly before noon on the 27th. He looks in the oven and says “you had the temperature to high” The oven can only go as high as it can go....and that is not “to high” for an oven. And, the temperature was set at about 225 F. But the oven burner exploded. And didn’t just blow the fuse...it also clicked the circuit breaker in the basement. So, he called and ordered a new-to-me oven. Not brand new, but honestly, I am happier with this one than I was with the last one which did come brand new. The day that brand new one came, I said there was a short in it and it was a fire hazard. It was repaired so many times, in a short period of time.

Attachment DeletedI made a fried egg and bacon sandwich for NYE. And tonight I used bacon drippings to stir-fry some cabbage, and I cooked cornbread and purple hull peas.

I'm happy to hear that no one got hurt at least - hoping your new stove will perform better! f070

You eat a lot of beans and peas I've never heard of... you must be very healthy! (I heard these things are good for you - lots of fibre etc.)

neesy I used to enjoy baking but over the years, I seem to have lost it. but now....I’m enjoying it again. i set the oven to 350 and it bakes at 350. Even if I use a stove element. It’s amazing. I no longer have to play musical burners to figure out which two can work at the same time. And if I want, I can turn on the oven light. It’s like magic. everything cooks more evenly too. Did up another batch of calzones, and the tops browned better without over doing the bottoms.

That's great that you now have a properly working oven and stove top
I got a cook book from the library called The Looneyspoons Collection - it's all the favourite recipes of Janet and Greta Podleski and so far I've made a really good pancake recipe with a blueberry sauce.
There are a lot of other very good recipes in there as well.
How are things going with the bread?
oh yeah - I found a pic - here's the book - I recommend it!

It's Super Bowl day, so no real supper. We're making veggie tortilla roll ups, calzone pinwheels, cheese pennies, homemade fried pickles, and having store bought cream puffs.

I'm going to pick up a pepperoni pizza at Hungry Howie's. I'm craving pizza, garlic bread and chicken wings. Ice cold Pepsi.
