Tonight was a new type of casserole, called Cheesy Baked Eggs - I think if I made it again I would lower the heat to 325, as 350 might be too hot for eggs. I would also change the time to about 40 minutes (the recipe called for 50 minutes)
Overall it was okay and it also has cottage cheese in it which magically melts somehow so it does not show up as little lumps. I used grated Swiss cheese and also mozzarella which came in a package already grated.
It was tasty and we had leftover rare steak that was sliced up and cooked in a bit of brown gravy. Only thing missing was vegetables and I just realized we had a Caesar salad kit in the fridge!

So, was it kind of like a quiche? My mom made one last week and she said it was very good. Yes it was very similar to a quiche but without a crust. Also if I made it again I would add some parsley - all I did was sprinkle a bit of paprika over the top of this one.
I used 8 eggs, 1 cup of cottage cheese, approximately 1/2 cup of flour and for the grated hard cheese I just eyeballed it - you can find the recipe online
(Recipe called for 12 eggs but my eggs were extra large)

I tried fire-roasted jalapenos last night for the first time. Delicious! They still had their seeds, but weren't even that spicy. I was surprised. So good!

The possibilities are endless! Tacos, burritos, goulash, chili, hamburgers, spaghetti...and don't forget tater tot hotdish!
Tonight I'm going to try to make some sort of bruschetta with french bread and this yummy artichoke/green olive/basil spread I found at the store. Also sauteed cauliflower florets with garlic and onion. I have the ingredients to make a southwest pasta salad (cold) and veggie chili as well. We'll see what happens over the weekend.

Hey there - I made some new weird casserole with sliced potatoes, onions, and sauteed ground beef - you layer the potatoes and onions then layer ground beef with seasonings on top of that;
After repeating the layers you then finally put a large can of stewed tomatoes on top, then bake in the oven for about one hour.
Not bad but, like I mentioned to someone else here, it would probably be better with gravy.

I think it's going to be some kind of taco salad for dinner tonight. I've become addicted to Ortega Medium Taco Sauce!
Tomorrow I need to buy flour to bake banana bread (heavy on the walnuts!) sometime this week with some overripe bananas.

I follow a book/foodie blog called The Hungry Bookworm - she makes a food related to the book and shares - like we'd do tooter fish for Drawing of the Three . Or - what else SK related.
I like Pioneer Woman recipes - but you gotta watch it - it's all bad for you - her family does physical labor, so it's fine for them - not so good for desk sitters like me. I make her jalapeno bread about once a month: mayo, butter, cheese, olives and jalapenos spread onto a split loaf of French bread and cooked like garlic bread.
Tonight we're having my hodge podge hamburger soup: ground beef (I think I'd actually prefer it with tofu , but my family likes ground beef - I'm not a vegetarian, but I don't really like ground beef), onion, ketchup (it does make a difference), beef broth, V8, frozen mixed vegetables, petite diced tomatoes, a few chopped potatoes (with skin on), Worcestershire, red pepper flakes - find your balance with all that - it's cook's choice. Simmer all day. Serve with cornbread. I've already got it simmering because Sunday is a busy day for me and I don't want to have to cook dinner when I get home.
I like to slice potatoes & onions, toss them in olive oil & butter, salt & pepper them and then roast them in the oven for a while. They are sooooo good.
I wish I didn't like to cook and eat so much.

hollygolightly I just started watching The Pioneer Woman (some episodes are streaming on Hulu). I bought some of her kitchenware I found on clearance. A three piece glassware storage set with pretty etched designs and bright-colored lids. They make me happy when I look at them.

I wish I didn't like to cook and eat so much. Your soup sounds a lot better than what I made yesterday - I called it tomato rice but it was really just leftovers diluted with homemade chicken stock - the chef was not impressed

So last night I tried to make a beef rouladen which turned out not too bad, but he found it a bit hard on the outside (the part that was above the beef stock). The stuffing in the middle was very nice (mushrooms, celery and onions sauteed then mixed with bread crumbs and parsley).
We had that with some egg noodles in a creamy sauce which was sort of a casserole - you use one can of Campbell's Cream of Chicken soup plus a few other ingredients.
Oh yeah - just remembered - after you make the sauce for the beef and thicken it you add 1/4 cup of sour cream - it was pretty good. We had this with green peas.

Last night was baked potato, a noodle dish I made previously (I just added some sour cream, parsley and paprika), slow roasted ribs and Mexican corn that Andy made (he just adds chopped up green pepper and a bit of red pepper) We had that with Caesar salad.
I couldn't even touch my potato so I saved it for today and will make home fries with it.

This is really authenticYou need:
Mustard 1/2 Cup minced onions. Salt and black pepper Bacon or Salami cornichons/gherkins
Spread 1/2 tablespoon mustard over one side of each piece of meat. Sprinkle the onion, paprika, salt, and pepper evenly over the steaks. Lay one slice of bacon on each piece. Roll the steaks jelly-roll style and secure with toothpicks.
Heat the canola oil in a skillet over medium heat. Cook meat on all sides until browned. Add the beef broth and water; bring to a boil. Reduce heat to medium low; cover and simmer until tender, about 30 minutes.
Remove the meat rolls. Strain the broth mixture and return liquid to the skillet. Whisk together the cornstarch and 1 cup of water. Slowly pour the cornstarch slurry into the skillet, stirring continually until the sauce has thickened, 2 to 3 minutes. Stir in the sour cream. Return rolls to the sauce; serve immediately.

I'm making very unconventional food for Easter. (I'm not a traditional person anyway.) I made some fresh salsa and am going to make veggie chili or enchiladas. Not sure yet.
