We have a pressure cooker but it has a slight crack in the plastic and does not seem to work as well as it used to.
Not sure if I want to get one yet - maybe I'll find one on sale.
Does it come with a recipe book?

I like it. It's really worth it if you like to make beans. You can cook a couple of pounds of pinto beans in 30 minutes and they are very consistent each time. The pressure cooker is a pretty good time saver for a lot of things (look how in the recipe I posted everything goes into the pot at the same time). It's great for making chicken stock too. Once you get your times figured out, if you cook rice , quinoa or other grains, they come out the same every time as opposed to the varying consistencies you get on the stove top.
You can also use it as a regular slow cooker. If you get one, I would suggest getting an extra stainless steel pot and a glass lid. The instant pot only comes with the pressure cooker lid so when you're done cooking, the glass lid is handy if you want to keep the pot on warm and serve out of it. The extra pot isn't necessary but it's nice if you have leftovers that you just want to leave in the pot, you can take the pot out and stick it in the refrigerator. Then you still have an extra pot you can cook in.
I like mine. These are pretty easy for cleanup too. You only have 3 pieces to clean, a stainless steel pot, a lid and a rubber ring.
There is a sparse recipe book that comes with it but there are tons of recipes on the internet and many books out there.

Thanks - I might look into getting one - still waiting for my income tax refund but the military pension will be in the bank by the end of next week

Tonight will be something made with Angus beef steaks - we got three of them yesterday at Tenderloin Meats on Main Street.
Southwestern Steak, Black Beans & Rice Serves 6
Ingredients:
2 pounds Certified Angus Beef ® flat iron or tri-tip sirloin steak, about 3/4-inch thick 3 cups hot cooked long grain rice 1 teaspoon ancho chili powder 1 teaspoon ground cumin 2 teaspoons salt, divided 2 teaspoons canola oil 1/2 teaspoon coarse black pepper 1 lime, zested and juiced 1 (10-ounce) can tomatoes and green chilies, undrained 1 (15-ounce) can black beans, rinsed and drained 1 cup frozen corn, thawed 1/2 teaspoon chipotle powder 1/4 cup chopped cilantro
Instructions:
Prepare rice according to package directions; keep warm. In a small mixing bowl combine ancho, cumin, 1 1/2-teaspoons salt and black pepper; rub onto steak until well coated. Heat canola oil in a large skillet over medium-high heat. Pan sear steaks to desired doneness. Place on cutting board to rest. In a large mixing bowl combine lime juice and zest, tomatoes, black beans, corn, chipotle powder and remaining 1/2-teaspoon salt and mix well. Add hot rice and toss to blend. Place rice mixture on large serving platter, arrange beef slices on top and garnish with cilantro.
This recipe looks good but I would have to cut back on the spiciness as Andy can't handle hot spicy foods due to his reconstructed tongue

Barbecue chicken thighs in the oven, black eye peas and cornbread. I'll probably serve chicken over rice.

Do you eat fish at all? (Not sure what level of vegetarian you are but I'm guessing not)

Those tacos sound good Nope - no fish. My mom likes fish tacos. They're really popular around here (particularly on Fridays this time of year because of Lent).

Instant pot is....not really instant at all, but it is fast. neesy I definitely think it’s worth the money. I discovered that Canadian Tire sometimes has sales that are not advertised. We walked in found the IP on sale so bought one. I did not buy an extra liner or glass lid. When I make soup or stew, I just put the big lid back on. I don’t use it as a slow cooker. I did throw my crock pot out.

I'm making chili. This time I fried the hamburger meat with onions and poured into crock pot. Then I added the petite diced tomatoes, chili beans, northern beans, V-8 juice, chili powder, sugar, and water. I like mine with Ritz crackers. My ideal chili is what I grew up eating in the school lunch room in Alabama: meaty, mildly sweet, and not too many beans. They always served it with peanut butter syrup sandwiches cut into triangles. One of the lunch room ladies said they put peaches and syrup in a blender and mixed well with peanut butter. They are delicious. Try it. Don't give me your spicy Texas chili- no, thanks. Sorry mary . LOL

I don't like V-8, all I seem to taste is the celery and I'm not a fan. Lol
