Because German nouns are based on gender. Masculine, faminine, neutral.
Der Morgen, Der Tag = Masculine. Die Nacht = Feminine
Because it’s „die Nacht“ and not like “der Tag, der Morgen, der Abend”. So you have to use gute. Gute and Guten have the same meaning, the ending is changing for the gender of the noun.
