This thread is fascinating, gang. Now that chili season is upon us, I'll probably be making the first batch of Tanith's Medusa Cascade Chili of the season. I've never written down the recipe (yet) because it's still a work in progress.
I have a question, though. Is there a particular reason you prefer coarse ground beef? Not sure if the meat department at the local Palace of Earthly Delights offers that, but I'll try anything once.
Tbh, i use coarse ground beef for everything, meatballs, burgers, chili. That’s what our ‘ground beef’ or ‘hamburger meat’ looks like. Chili meat is much coarser than that.
I never thought that much about it really! It’s something I’ve grown up with, and it available everywhere!
It surprised me when Dio said they didn’t have it in grocery stores there in Pa. It was available in Nebraska grocery stores, when we were there.
Like I said, I guess it’s all ‘regional food’.
I think there’s still pictures in my first post here. 🤔 I’ll go check later. 🙂

This is the most coarse you can get here in the supermarket/butcher it's used for everything. Maybe you can get a more coarse ground beef on request, at the butcher.

This is the most coarse you can get here in the supermarket/butcher it's used for everything. Maybe you can get a more coarse ground beef on request, at the butcher. I would think so 🤔 Here, you can talk to anyone working in the meat department, and ask them to cut or grind stuff for you.
Lots of times of the ex would buy whole tenderloins and have the meat guys, cut it into steaks whatever thickness he wanted.
It’s what the guys do, and are there for. 😊
It was cheaper to buy the whole tenderloin on sale, then have them cut it for you. Rather than buying a lot of individual steaks.
I have had just regular stew meat on hand in the freezer, and taken it out to use in chili rather than waste time going out shopping.
You just have cut the cubes of stew meat into much smaller pieces. And cook it a little longer.
And you can’t be lazy about it, you have to cut it all up into small enough pieces or you will have stringy, tough and chewy mess on your hands.
It takes some more time, but still makes a good pot of chili. 🙂

I’m just saying that when hamburger grind beef, cooks down and gets too fine of a texture when you cook it in a deep pot. Or a large skillet, like when you’re making taco meat. Sorry, sometimes I don’t do very well at explaining g things.

A few years back the girl who was hired at the library the same time as me came in and said she'd been by Taco Bell to pick up some lunch but couldn't get it because "the meat hose" was broken.
There was a long, long silence after she shared this information.
Now, I don't know what the meat hose is, or what it's used for. I don't want to know. What I do know is that Taco Bell immediately came off my list of places to get chow.
Excuse me. The muse is laughing hysterically and needs to be calmed down...
