I could be wrong, Frank, but doesn't Carol, in Star Trek 3, mention something about how she didn't tell Kirk she had a son because she was afraid he'd (Kirk's son) go off travelling the stars with Kirk?
If that's the case, then doesn't ST:SNW contradict the lore by having Kirk know about his son's birth prior to it happening? I searched the Star Trek Wiki and nope, its mentioned in Star Trek: The Wrath of Khan that Carol asked Kirk to leave her alone to raise their son, citing him being a Starfleet officer and not getting on well with him.

Star Trek: The Search for Spock is excellent as well.
The retelling of Wrath of Khan by JJ Abrams was ... well ... let's not talk about it.

I have completed ST: SNW season 2. I thought it was generally better than the first season, but I would still say that there are solely about three or maybe four episodes of each season that I would return to and recommend.
Some of the other episodes were simply ... well ... baffling ... that episode about the Klingon general just made no sense. I did really like the season finale with the Gorn and Spock and Chapel's relationship (I also liked the Gorn episodes from season 1), so I'm hoping season 3 will be better (and have the Gorn present).
To be fair, three of four excellent episodes a season is better, far better, than every other Kurtzman trek show. I think that ST:SNW being good has more to do with Kurtzman not being involved; I don't believe Kurtzman has written any episodes of ST:SNW, with the possible exception being the pilot episode.

But I don't know how they can have fantastic episodes like the episode with La'an and Kirk and the season finale ... and then there's the episode with the Klingon general ... totally baffling.

That's a good point; I hadn't really thought about that. Nicolas Meyer's autobiography has a lot of really cool information about Star Trek: The Undiscovered Country. The title, for instance, was meant to be a reference to a Shakespeare play were he's talking about Space (Shakespeare is), but its actually England that Shakespeare is referring to when he talks about the undiscovered country. He didn't find this out until after the movie was made.

What really makes the Kirk and La'an relationship all the more tragic is the fact that we know it doesn't go anywhere with him and Carol. La'an, being a Starfleet officer, probably would have been a better relationship for Kirk, but of course he hoped that things would end up alright with the mother of his kid ... but we know that doesn't happen.
