That sounds so good. If you have time one day, please share how you make salsa. I've always wanted to try some using regular tomatoes and fresh peppers.
I am going to look for more fresh okra. I want to make fried okra again and make a pot of chicken and dumplings with black eye peas. Cornbread, of course. I just learned that people eat raw okra. Guess it makes sense, but it never occurred to me. I like in gumbo or fried. If I have an abundance of fresh tomatoes, I like to make pico de gallo. But the salsa is easier because of the blender and not as much chopping. My "recipes" aren't very professional or accurate. A lot of trial and error and seasoning to taste. Especially with fresh produce because it always seems to taste different - sometimes the tomatoes and bell peppers are sweeter, sometimes the jalapenos are spicier (even though I seed them), etc. But I am clueless on making salsa. Do you put vinegar? Sugar? Lime juice? Most salsa has onions...do you use red or yellow?

Here is a simple recipe I found on YouTube that looks and (probably) tastes like what I'm accustomed to. Don't know about the fire-roasted tomatoes and I won't use the chile peppers, but I think I can swing this. Is this how you do yours? morgan

LOL I've never roasted tomatoes or peppers - too time consuming. I should try it sometime though because I recently had fire-roasted jalapenos for the first time and they were life changing! Yum! I also am leery of using fresh garlic because it can overpower everything. I do add garlic powder though. And I only use half (or less) of the cilantro she did. I also add green pepper, which she didn't. And I use 3-4 seeded jalapenos, no chiles.

I'm thinking of making a very small batch (about three tomatoes) and seeing how I like the taste then later experimenting with other flavors and more ingredients. I need to get some restaurant style corn chips at Publix tomorrow.

Went to the farmers market with DIL last Saturday and bought some spices...red chili flakes, mixed peppercorn, parsley and Italian seasoning, and some apple wood smoked sea salt. Got some rhubarb too, but not sure what the heck I'm going to do with it. Marti froze it for me since we were leaving on our camping trip. I do not like rhubarb. Only bought it because hubby said he likes it. Any good rhubarb recipies???

IIRC, it takes about an hour to bake. The rhubarb, cream and sugar sink to the bottom. Use a spatula to cut and remove pieces and flip them over onto individual serving plates. Easy peasy rhubarb upside-down cake!

Need to get it picked up now that we're home from camping!!

I think I may have killed my cucumber plant; the trauma to the roots when I replanted it in a larger pot and too much water, perhaps? To my surprise, the extra seeds that I "threw away" in the back yard took root and are growing like wildfire. I almost mowed it down because I thought it was kudzu but bees feeding on the yellow flowers made me stop, plus the leaves were a healthier dark green. In a few weeks I hope to have some cucumbers.
Rabbits ate all my cucumber plants....and the lettuce. Chipmunk ate all the watermelon and the daisies. Right now, I still have tomatoes, peppers, carrots and radishes.

I received some garden jalapenos and cherry tomatoes, so I made some fresh salsa. Gave most of it to the person who gave me the produce and a little to my mom. Needless to say, it is almost gone. I hope to make another batch in the next week or so because green peppers are on sale at the supermarket. That sounds so good. If you have time one day, please share how you make salsa. doccreed Here's the salsa recipe I use. It can be tweeked, and you can substitute, add, or leave out ingredients.
2 Cups chopped tomatoes 1/4 Cup chopped red onion 1/4 Cup chopped yellow onion 2 chopped medium jalapeno peppers, seeded and ribs removed (for milder flavor you can use banana peppers) 2 Tablespoons fresh lime juice 2 Tablespoons chopped fresh cilantro (I don't use quite that much) 2 Cloves of garlic, peeled (I usually buy a ittle jar of minced garlic in the produce section, and add a teaspoon of that) 1 Teaspoon ground cumin 1/4 Teaspoon salt
Toss it all in a blender and combine, but let it remain chunky. Refrigerate for an hour.
Oh, P.S. You can add mashed up fresh avocado for easy guacamole

You buy any Florida strawberries? February is generally the big strawberry time in Fl. Big festival, etc, then they ship all those tasty fruit off to neverland places and we get CA strawberries! Go figure.

Cumin isn't overpowering......it has a kind of "taco essence" to it. It is supposed to be good for you as well

You buy any Florida strawberries? February is generally the big strawberry time in Fl. Big festival, etc, then they ship all those tasty fruit off to neverland places and we get CA strawberries! Go figure. spideyman I know what you mean about shipping out fruit.
When I was in Vancouver last week I bought cherries at one of the fruit markets downtown. The bag said 'I love B.C. fruit' and then in very small print was 'Imported from California'. They were good though. Jumbo size and great flavour.
