Mmmm...veggie lasagna sounds really yummy right about now. Haven't made any in a long time and can't seem to find a frozen one that does the trick.
My mom and I are fighting off colds. She made some lentil soup that is similar to split pea soup. It's very good. Not sure what else will be for dinner. Wasn't feeling very good last night either, so just had a bland sandwich.

I hope you're feeling better morgan ! My day didn't really go as planned - little fires I had to tend to everywhere. Ended up going to my mother in law's where there is no wine. Also no food. She's moved back to Memphis and needed us to move some things around for her. Le sigh. Not as planned at all. No kayaking, it was so damn hot here today. Go away summer - I'm over it now. Oh - we were talking about dinner!! So when we got home I had to pull dinner together. I made a pasta thing with a tomato cream sauce that turned out pretty good. And I had some chile lime shrimp from Aldi in the freezer to sear up, and some tilapia fillets. It turned out pretty good for an impromptu dinner. Fiddle dee dee - tomorrow's another day.

I'm starving. It's no cook Friday, but I've got the oven preheating for me. The Ogre is having leftovers, my son is eating out with friends, my daughter had Backyard Burgers. I really wanted hot wings, but I'm not getting out of the house and I don't have any chicken. But I do have fish sticks, buffalo sauce and blue cheese dressing - TA DA: buffalo fish sticks! I'm going to give it a try. It's all really only a vehicle for the sauce and blue cheese, right? I'll let you know how it goes!

hollygolightly, I could go for some chicken wings, too. Whenever I buy a box of chicken from Publix bakery, I eat the wings first. Just give me fried chicken any day of the week and I'm happy.

They worked - no where near as good as hot wings, but will suffice. By the time they were done I had decided it would be best to just dip the fish sticks in the buffalo sauce/blue cheese dip concoction I'd made. It worked fine. I should have just had tuna fish like doc. I do an unusual tuna fish: tuna, a little garlic powder, dill pickles diced, about 1/3 can of rotel, a little mayo, a little sour cream. And I eat it with tortilla chips. I know it sounds weird, but its good. It's one of those creative recipes you come up with when you're young and broke and can't even afford to waste gas going to the grocery store so you just work with what you've got.

I was reading about your chicken wings. Yup, I can relate, I could eat them every day of the week. The crunchy ones and blue cheese dip. On the side I like french fries and gravy. One of the grocery stores in the city make good ones but to me, a little expensive, $12.00 for 20 pieces. Usually I go to Costco and buy a 5 lb. tray of uncooked ones. Then I cooked them all in one evening and freeze them in servings. Doc, I still haven't tried to make my own fried chicken.

Yes - I made it many years ago for Home Ec class plus my Dad was from Quebec. It's a recipe in my Canadian Cook Book.
I used ground pork and grated a raw potato into the filling which I cooked for a while. It's spicy (I used an assortment of spices such as nutmeg, sage, poultry seasoning, even mace) c043 It was a little bit of this, and a little bit of that. I even put some garlic salt in there. As long as you don't have a heavy hand you can adjust the seasoning to your taste.
I decided not to have a piece as it's pretty high in fat with all that pastry etc.

Here is one (up above) I found, but my recipe is pretty simple:
Take about 1 pound of ground pork and cook it in a frying pan (I used a cast iron pan) - season it with whatever spices you have on hand (well within reason of course!) e.g. I used savoury ones like pumpkin pie spice, nutmeg (freshly ground), poultry seasoning, freshly ground pepper, garlic salt, a bit of ground mace. Think I might have even sprinkled some cinnamon in there. I was out of onions so I used the dehydrated kind that I had in my cupboard. It seemed a bit too fatty so I put in one peeled potato that I grated first in batches. I used a Russet potato, medium size.
After it appears to be well cooked you put it in a pie shell. I did not make my own pastry (red face) but used a frozen one. Didn't have a second crust for the top so I thawed out some puff pastry (Tenderflake) that we had in the freezer and used that for a top crust. Crimped it all around the edges. Cooked it in a 425° F oven for about half an hour until it was well browned.
That's it!
The above recipe in the link is more complicated but mine turned out fine.

@alexandra I had to do something quick and easy, since it was quite last minute. I baked a couple of cheese lasagnas (not homemade, not enough time). The mom is a vegetarian too and I thought most kids like cheese and noodles LOL. Made some garlic toast from the bakery, put together a couple lettuce salads, and bought a couple containers of vanilla ice cream with chocolate syrup on the side. Picked up a few different salad dressings, parmesan - and some juice for all those kids.
