NEESY Chicken Broth ?? I didn't know you should use that ...
Andy makes his own home made chicken broth with the bones from chicken (it's better if you use raw bones, not cooked, but both will work).
He ends up with something that looks a bit like jelly (once it is completely cooled and in the fridge);
plus he flavours it with onion, celery leaves, pepper corns etc. while it's cooking. Then when it's cooled down a bit he strains it.
It has a lot less salt than the kind you can buy. (a lot more flavour too)

I think I will give the homemade broth a try. Will use the ingredients Andy does but will check on Food Network and AllRecipes to see if there is a recipe with his ingredients and what else they might add. Every month or so Walmart has whole Chickens (about 4 lbs) on sale for $1.77/lb. Now that their are limits in the grocery stores things are much better. Last time they were on sale, a few weeks ago, 2 ladies bought them all. They filled 2
shopping carts each. Hoarding is so awful. Glad the Gov't has invoked a law against it and
re selling for profit.

Wow - how selfish is that? I cannot believe the store would allow two women with two shopping carts each, filled with chickens on sale, to go through the till!
I mean I believe you, but you'd think there really should be a limit on amounts i.e. like 3 or 4 per person, max
I'm making another recipe from The Looneyspoons Collection. I had taken this cook book out of the library just before they closed all of our libraries. So I guess I can keep it for a long time until everything goes back to normal.
I'm making a rice recipe called All That Jasmine using coconut milk, currants, chicken broth etc. plus you saute onions in olive oil and add some spices and minced ginger (yum) - they said either jasmine rice or basmati rice would work for the recipe.
We are having that with roasted parsnips and carrots, as well as grilled pork tenderloin that has been marinated for a couple of hours. Hope you are hanging in there and not going too stir crazy. We had our first death from COVID 19 today (a woman in her 60s)

We had our first death here yesterday too neesy . It was a 92 year old man. I sure hope he was able to talk to his family somehow. It breaks my heart to think of someone dying all alone and afraid.

I made a modified green bean casserole. Turned out okay, but not as good as I thought it would be. I'm not the best cook in the world though, so it was a challenge. Only set the smoke detector off once. Yay me!

That's terrible - I hope he did not die alone and afraid either. Are your numbers staying pretty steady?
I made a modified green bean casserole. Turned out okay, but not as good as I thought it would be. I'm not the best cook in the world though, so it was a challenge. Only set the smoke detector off once. Yay me! Ha! That is funny - our smoke detector by the front door used to go off just from the heat of the oven, even if there was no smoke.
What else was in with the green beans?

The cases have been slowly climbing as more test results are coming in. There was a big jump between Friday and Saturday. Thankfully only a few more this morning.
The numbers are the worst here because it's the second largest town in the state. And because it's the capital and I think more tests are being done here. We're luckier than most states because of the low population.

Just stay safe - when I go out I do not wear a mask (I do have a few left over from when I worked at the hospital); but I saw a lot more people yesterday out shopping and wearing masks.
I even saw a few wearing them while driving their vehicles.

Not really. The first thing that came to mind was sauteed cauliflower, garlic and frozen peas. Make a homemade white sauce and serve it all with pasta and top with parmesan. That sounds yummy to me at the moment.
I've seen a few recipes for cauliflower "steaks" but I've never tried it. Personally, I like my cauliflower really soft.

I'm trying to eat more vegetables for fibre and to help with weight loss.
Yesterday I splurged and had apple crisp for dessert plus I was a bit over in my calorie count for the day but luckily my weight has stayed the same. I am down 5 pounds and it seems to be staying off - yay!
