Not sure what I'm having tonight. Tomorrow I may make a spicy meatloaf with mashed potatoes and purple-hull peas and brown sugar cornbread. Then I want to barbecue some country-style backbones in the crockpot and serve with rice, fried okra and toast. I had meatloafs with potaoes yesterday and for lunch today. Tonight i make some sandwiches, i dont want to cook anything today

Yes, that's correct. I add a little extra in the batter and on the top as they are cooking. It's popular in the South and in barbecue joints.

I want to get some fresh corn soon. I am going to make chicken and dressing and "skillet corn", which is fresh corn, butter, and milk fried in a skillet. I am going to make a chicken pot pie one night and then chicken and dumplings. I usually wait til the hens are on sale and buy a bunch to make several meals. I haven't had chicken in a while so I am brainstorming meals. I will also use up some of my butternut squash (baked with brown sugar?) with the dressing.
One of my favorite meals in the fall (or anytime) is chicken and dumplings, black eye peas, sweet potatoes, fried okra, and cornbread.

Dinner tonight was takeout Chinese food - Vegetable Deluxe. I had to give up the place I used to get Lo Mein from. Had a bad allergic reaction to MSG a couple weeks ago. I think they might have the rice noodles I like at my old place, I just didn't order the right kind before. I think they're called Cantonese noodles.

I know it isn't fall yet, but I had to make a batch of homemade tomato basil soup last night. Toasted myself a couple of hard crusty rolls for dipping, sat on the couch and binged the final season of Orange Is The New Black......the soup was fantastic. I froze the rest in single serving portions to enjoy when the weather gets cooler.

I brushed chicken thighs with oil, salt and pepper and baked at 375 for about 40m. After it cooled, I chopped up meat for sandwiches. Some people like to put seasoned skin in blender with mayo and slather on light bread. I usually buy Nature's Own but lately I get Sara Lee Honey Wheat. Goes great with Lay's plain potato chips.
What kind of bread do you buy? When I can I splurge on Pepperidge Farm Potato Bread.

doccreed I usually buy Brownberry Italian bread or Village Hearth Unseeded Rye. Neither have high fructose corn syrup.
Tonight I'm making an avocado, tomato and red onion sandwich on rye. With some Gedney's Jalapeno Babies pickles on the side. Yum!

You gonna make some fried green tomatoes soon? I fried yellow squash a couple days ago...think I prefer zucchini.
Yeah, the two bread brands I mentioned don't have HFCS either. Enjoy your dinner. I have some red onions but haven't figured out what to use it for yet.

Lucky 32 has the best fried green tomatoes I've ever had. Here's their recipe:
FRIED GREEN TOMATOES
5 slices Large Green Tomato ½ cup Buttermilk ½ cup Oyster Fritter Breading 4 tbsp Bacon Grease or vegetable oil
Oyster Fritter Breading
1 cup White Corn Meal 1 cup All Purpose Flour 2 tsp Ground Paprika 1 tsp Salt ½ tsp Onion Powder ½ tsp Garlic Powder ½ tsp Cayenne Pepper ¼ tsp Black Pepper ½ tsp Oregano Leaves
Combine all breading ingredients in a bowl. Dredge tomatoes in buttermilk, then in oyster fritter breading. Heat bacon grease in sauté pan. Add tomatoes and fry in hot pan until golden brown on both sides. We suggest topping each tomato ¼ ounce of goat cheese (or your choice of cheese) Best if served with a sauce and/or relish.
They served them on top of a ranch or bleu cheese type of dressing, and drizzled the tops with voodoo sauce.
I'm also thinking the oyster fritter breading would be great for fried pickles, too.....

Andy is weird - he does not like pasta, chili con carne or most Tex-Mex type recipes.
