Not sure what's for dinner. I have some of my Mediterranean Veggie sandwich from Panera leftover from last night. Also some salad stuff.
Picked up a few things at the grocery store to make dinner for a family I met recently. The oldest boy (they have six kids! Oy vey) is having outpatient surgery tomorrow and I thought it would be nice to make them some food since they don't have a church community right now to help out with things like that.
That's so kind of you!! Corporal acts of mercy! That's a big family to feed! Six kids - yikes! We have some large families at our church, 15 being the largest I've ever personally known - that mom is a good friend of mine. I'm shocked at how happy and peaceful she is. I'd be freaking out all the time.

I'd be freaking out all the time. We will probably have some kind of chicken (I just took some chicken breasts out of the freezer) plus I am roasting some vegetables in the oven:
(butternut squash, onion, red pepper, broccoli, carrots, mushrooms, and one potato. I drizzled them with some balsamic vinegar and a good quality olive oil and then seasoned them with thyme, basil, garlic salt, and black pepper. Added a squirt of lemon juice as well, as I don't want the potatoes to discolour.
They're roasting in a 475° oven for about 40 minutes and I'm stirring them every 10 minutes.
They smell really good!
I did have the lid on the roast pan for the first ten minutes but after reading about how to roast vegetables I took it off, so they will be more crispy rather than soggy.
I hope they turn out okay!
This one looks good but I did not put any zucchini or tomatoes in mine (Maybe next time - I do have quite a few tomatoes that have gone from green to red that I have to use up)

neesy I think I am going to give it a try. I make pretty good pastry. Will get the ingredients when I go shopping. Never heard of grating a potato in it, but sounds like a great idea. It should freeze well too, so I can freeze it in portions for me. Going to have a look for a recipe on the Net (unless you want to share yours )
Here is one (up above) I found, but my recipe is pretty simple:
Take about 1 pound of ground pork and cook it in a frying pan (I used a cast iron pan) - season it with whatever spices you have on hand (well within reason of course!) e.g. I used savoury ones like pumpkin pie spice, nutmeg (freshly ground), poultry seasoning, freshly ground pepper, garlic salt, a bit of ground mace. Think I might have even sprinkled some cinnamon in there. I was out of onions so I used the dehydrated kind that I had in my cupboard. It seemed a bit too fatty so I put in one peeled potato that I grated first in batches. I used a Russet potato, medium size.
After it appears to be well cooked you put it in a pie shell. I did not make my own pastry (red face) but used a frozen one. Didn't have a second crust for the top so I thawed out some puff pastry (Tenderflake) that we had in the freezer and used that for a top crust. Crimped it all around the edges. Cooked it in a 425° F oven for about half an hour until it was well browned.
That's it!
The above recipe in the link is more complicated but mine turned out fine.
The recipe sounds good, but I would like to use a potato instead of bread crumbs. Probably a silly question, should the potatoes be raw? I have never worked with puff pastry before but I like that idea instead of a pastry top.

Those look delicious, Neesy!!! The munchkin wants pasta alfredo tonight with roasted red peppers and broccoli, so that's what we're gonna have.

Hi Alexandra - yes - I peeled a raw potato and grated it into the meat mixture. You have to do it quickly or else it starts to turn brown (well mine did anyway - I used a Russet potato). Maybe if you sprinkled the grated potato with salt that might help.
The pastry was easy to use - it just comes in a square but it took about an hour to thaw out. I should have taken it out sooner. If you make your own pastry, I would just go with that - Good luck - hope it turns out good a020
